Healthy Refreshing Summer Sipper

Tired of plain ole water? Looking for something refreshing that's still healthy? Try this easy refreshing recipe.

In a blender put:    2  large cucumbers, peeled & cut in chunks

                               1/2 cup fresh squeezed lime juice

                               1/2 cup coconut sugar or coconut nectar

                               1  cup fresh mint leaves (rinsed)

                              Water to fill blender 3/4 of the way

Cover & blend all ingredients until smooth. Pour thru sieve into pitcher and serve with ice. If you wanna get fancy, you can add mint leaves and or lime slices to glasses when serving. Yummy, cooling and refreshing. Enjoy!

*note, you can substitute regular sugar or agave to taste. I prefer coconut nectar because it's low glycemic (doesn't jack up blood sugar levels).
